Executive Chef Francesco Casetta

One of the pleasures of visiting Florence on a business trip or on holiday is the opportunity to see some of the world’s greatest works of art and culture. However, this cannot be done without taking the time to enjoy as well some of the best dishes of the Italian cuisine, prepared in simple trattorie or elegant gourmet restaurants throughout the city.

Among the most popular Restaurants in town, L’Incontro continues today the tradition of offering excellent food and courteous first class service in a modern and sophisticated atmosphere.

L’Incontro is today the domain of Francesco Casetta, Executive Chef of authentic Florentine origins who has now returned to Florence after gaining important experience in Italy (“Dal Pescatore” di Canneto sull’Oglio, 3 Michelin stars ) and abroad (in particular in the States, with Four Season Hotels and Resorts Palm Beach and Ritz Carlton Naples - Florida).

In this new challenge, this young and dynamic chef is now at his best, leading a young team of chefs with enthusiasm and great professional competence. Keeping a strong focus on Tuscan cuisine, he combines his research on traditional recipes with a creative experimental approach and modern techniques of preparation which allow a lighter final result.

His cuisine offers a right balance among sophisticated dishes – where the basic ingredients maintain their original flavours – and simple, genuine options, taken from the popular tradition and accompanied with some wonderful Tuscan wines.

Special attention is given to the choice of seasonal ingredients, always fresh and produced locally. As any other great Chef would do, Francesco is personally in charge of the daily shopping for the kitchen. He is often seen in Florence local markets among aromatic herbs, colourful fruit and vegetables and stalls of fresh fish.

The secret of his cooking lies here.
